Description

Ingredients
  • 2 cups grated bottle gourd (lauki/dudhi) (squeezed and drained)
  • 1/2 cup almond flour
  • 1/4 cup coconut oil
  • 1/2 cup coconut sugar
  • 1/2 tsp cardamom powder
  • A pinch of saffron strands (soaked in warm water)
  • Slivered almonds and pistachios for garnish
  • 1 scoop of vegan vanilla protein powder
Instructions
  1. Heat coconut oil in a non-stick pan over medium heat. Add the grated bottle gourd and sauté for about 10 minutes until it softens.

    Stir in the almond flour and cook for another 5-7 minutes until the mixture thickens.

    Add coconut sugar, cardamom powder, saffron, and protein powder. Mix well until all ingredients are combined and the mixture starts leaving the sides of the pan.

    Garnish with slivered almonds and pistachios. Serve warm for a comforting, protein-rich dessert.
